Institutional Leadership

At the OU Health Campus, Dr. Mitchell serves as the Director for Nutrition Research at the Harold Hamm Diabetes Center and the PLANTEd Research Lab. She is passionate about translational nutritional physiology and enjoys helping collaborators across the research spectrum explore how nutrition interventions can be translated and scaled from animal, to clinical, to community models

to reduce the impacts of diet-related chronic diseases. Broadly, Dr. Mitchell's training and background focus on the clinical pathophysiology and metabolism of obesity and diabetes.

She has an extensive training background in the development, design, and implementation of dietary interventions and physiological assessments including: skeletal muscle metabolism, glucose and insulin sensitivity, liver function, resting energy expenditure, graded exercise testing, body composition assessment, and bench top assays. Her current research focuses on the improvement of dietary quality during pregnancy and postpartum and Indigenous Food is Medicine.

A Bit About Dr. Mitchell

On a more personal note, Dr. Mitchell grew up in Cross Timber, Texas. She is a first generation college student, proud member of the Citizen Potawatomi Nation in Oklahoma, and a nature enthusiast. She has backpacked in the Rocky, Appalachian, and Cairngorm mountain ranges and loves backcountry riding with her horses. Some of her favorite adventures on horseback have been in the Blue Ridge, Teton, Gallatin, McDowell, Mazatzal, and Superstition mountain ranges. In addition to her love for the outdoors, Dr. Mitchell's career path has allowed her to live in numerous states ranging nearly coast-to-coast. Dr. Mitchell's love for the outdoors also extends to animals. She currently has 2 horses, 1 dog, and 2 cats - all of which are rescued.
